Quick Potato Snack 1 potato, 5 minutes Scrub a good-size potato or peel it. Chop into cubes about finger-tip size (1/2"? or less). Dump into microwaveable bowl with lid. Spray with nonstick cooking spray. Shake so that the pieces get coated. Spray again, and toss in some seasonings. Some combos I like: 1/8 t. ea salt, pepper, dill, celery seed 1/8 t. ea salt, rosemary, pepper 1/2 t. curry powder (crush dried herbs between your palms to release more flavor). Microwave 2 min on high. Shake. Microwave 2 min on high. Serves 2 as quick snack. For me, it's dinner when served with a salad or maybe a sliced tomato. Note: The fat in the cooking spray will cause some plastics to deform; I suggest using a glass dish or a made-for-the- purpose microwave container. Multiply the cooking time by the number of potatoes; use 4 potatoes, and it's no longer a quick snack. Larger numbers of potatoes can be baked on a non-stick cookie tray at 350 degrees. Toss every 5-10 minutes until they start to get brown and crunchy (1/2 hr?). Makes a nice sidedish.
