The Pasta House Company Salad serves:4 (meal) 8(dinner) Ingredients: 1 head iceberg lettuce 1/2 head romaine (or red-leaf) lettuce 1 c. canned artichoke hearts 1 c. thinly sliced peeled red onions 1 c. well-drained diced pimentos 2/3 c. olive oil 1/3 c. red wine vinegar 1 t. salt 1/4 t. ground black pepper 2/3 c. freshly grated parmesan cheese Directions: Clean, dry, and chill lettuce. Tear into small chunks in large chilled bowl. Crush artichoke hearts and add. Add onions, well-drained pimentos, and parmesan cheese. Sprinkle olive oil, vinegar, salt and pepper over salad and toss until well mixed. Serve promptly after dressing, does not store well. Top each serving with more parmesan cheese and freshly ground pepper if desired.
