Heart-Smart Cocoa Kisses low-fat desserts 2 eggs 1/4 t. cream of tartar 1/8 t. salt 2/3 c. sugar 3 T. cocoa 3/4 t. almond extract (optional: 1/3 c. finely chopped almonds) Preheat oven to 200 degrees F. Line 2 cookie sheets with aluminum foil. Beat egg whites, cream of tartar, and salt, until soft peaks form. At high speed slowly add sugar 2 T. at a time. On low speed beat in cocoa and almond extract. Fold in almonds; reserve 1 T for topping. Drop slightly rounded tablespoonsful on cookie sheets. Sprinkle with reserved almonds. Bake 1 hr 15 minutes until set. Cool on cookie sheet 10 minutes. Gently pry cookies off with metal spatula (thinking of it as "slicing" them off with a knife works better for me -sdh).
