Chocolate Mint Squares These look fancier than the effort it takes to prepare them. Brownie base: 1 cup butter 4 oz unsweetened chocolate 2 cups sugar 1 cup flour dash salt 4 eggs Microwave butter and chocolate (stir several times) until chocolate is almost melted. Stir until chocolate melts. Beat eggs lightly; add sugar, flour, and salt. Stir in chocolate/butter mix. These should be dense, so don't beat for long. Bake at 350 degrees for 20-25 minutes. Do not overbake. Cool at room temperature. Frosting: 2 cups confectioners sugar 4 T butter 4 T green Creme de Menthe Beat together until smooth. Spread over cooled brownies. Refrigerate 1 hr. Glaze: 4 oz unsweetened chocolate 4 T butter Melt together. Pour over chilled, frosted browies, tipping pan to spread evenly. Refrigerate 1 hr before cutting. Cut into squares using sharp knife.
