CREAM CHEESE AND CHOCOLATE CHIP CUPCAKES Preheat oven to 350 degrees. FILLING Beat together well in smallish bowl: 8 oz. cream cheese (can be low-fat or Neufchatel but not fatfree) 1 egg 1/3 cup sugar 1/8 teaspoon salt Stir in: 1 c chocolate chips Set aside. BATTER Sift in larger bowl: 1 1/2 cups flour 1 cup sugar 1/4 cup cocoa 1/2 teaspoon salt 1 teaspoon baking soda Add and mix: 1 teaspoon vanilla 1 cup water 1/3 cup veg. oil 1 teaspoon vinegar Put paper wrappers for 18 cupcakes into cupcake tin(s). Fill cups halfway with chocolate mix. Top each with a heaping tablespoonful of cream cheese mix. Bake at 350 degrees 25-30 minutes or until cake part tests done and cheese is starting to turn light brown. From: Julie Wright Note: Makes more like 12 cupcakes in my hands. These are really good!
