Artichoke Spinach Dip 2 16 oz cans of artichokes 1 8 oz pkg frozen spinach 1 1/2 c parmesan cheese 3/4 c mayonnaise (2 cloves garlic, pressed or chopped fine, optional) Drain artichokes and chop coarsely; mash with a fork. Thaw and drain spinach, and chop fine (can use chopped frozen spinach). Combine spinach, artichokes, mayonnaise, and 1 c parmesan cheese. Add garlic if desired. Sprinkle remaining parmesan cheese over top. Bake 30 minutes at 350 degrees. Serve hot with triscuits or bread. Also good cold.
