'49ers Gold Bars low fat desserts 6 oz dried apricots 2 eggs 1/2 c. brown sugar 1/4 t. salt 1 t. grated orange rind 1 c. all-purpose flour 1 t. baking powder 1/4 t. nutmeg [1/2 c. chocolate chips] [1/2 c. walnuts] Confectioner's sugar for rolling Cut apricots into small pieces; soak in hot water until soft, then drain very well. Beat eggs well. Beat sugar into eggs until light and foamy. Add orange rind. Stir together salt, bk. powder, nutmeg, and flour. Fold into egg mixture. Add apricots ( and chips or walnuts); mix briefly. Spread batter into greased 9" baking pan. Bake in 350 degree oven for 30-35 minutes (until done). When partially cool, cut into 1" bars and roll in confectioner's sugar. Cool on racks and reroll. Store in an airtight container. I really like these with chocolate chips.
